A mouth watering side dish for rice. This sambol goes well with puttu and string hoppers too. A truly beautiful Sri Lankan dish.
Vegetarian Eggplant Sambol
400g thin eggplant
1/2 tsp freshly cracked pepper
Juice from 1/2 lime
Fresh chilli according to your taste
2 medium size red onion (best for fresh salad and sambol)
2 sprigs of curry leaves
1/2 tsp sugar
Required salt
