Shish Barak (Lebanese Lamb Dumplings in Yogurt Sauce), Joshpara (shish barak, chich barak, الشيش برك) is a kind of dumpling popular in Central Asia, South Caucasus and the Middle East. The dumplings are made of unleavened wheat dough squares filled with ground meat and condiments #ClaudettesKitchen traditionally, Shish Barak is cooked with plain yogurt (Greek yogurt). Yogurt is added to a cooking pot with a bit of water, then slowly brought to a boil on very low heat, and while constantly stirring. Shish barak are little, ravioli-like dumplings filled with seasoned lamb, onions, and pine nuts that are boiled, baked, or fried and served in a warm yogurt sauce with melted butter, mint, sumac, and more toasted pine nuts. They are made in Lebanon, Iraq, Syria, Jordan, and Palestine, and are very similar to manti, the lamb-filled dumplings eaten in Turkey.
